All burgers are served at cardboard boxes, manufactured to order in accordance with the standards of the Restaurant Car brand. Drinks are served in insulated cardboard glasses.
Drinks are also made exclusively from natural ingredients: natural tea (brewed in a French press), natural coffee (brewed in a professional coffee machine). Seasonal drinks - non-alcoholic, tea and coffee based.
4. SALES AND MARKETING
The target audience of the project is men and women aged 15 to 40 years with an average income and above; leading an active lifestyle, spending a lot of time outside the home; tourists and students.
Points of sale (see Section 2) are selected taking into account maximum traffic at certain times of the day. The food truck moves around the city in order to reach the target audience as much as possible.
Used to promote the brand social media: vk.com, Twitter and Instagram. SMM is managed by the project initiator himself. Photos of burgers with attractive descriptions, recipes for burgers and snacks for home cooking, photographs of satisfied customers with “Restaurant Car” products (with their consent), city news from the immediate environment of the food truck and other information are published. Paid promotion of individual posts is used. Advertising budget – 3,000 rubles per month.

5. PRODUCTION PLAN
The main production asset is a food truck - a car van equipped with equipment for preparing burgers, hot drinks and French fries. The new BAW brand van is taken as the base as the most affordable. Kitchen equipment - European manufacturers High Quality. In accordance with the requirements of regulatory authorities, the food truck is equipped with running water supply, sewerage, and fire extinguishing equipment.
The food truck is equipped specialized company, offering turnkey services for organizing public catering establishments: purchasing a car, developing advertising design, developing menus, selecting suppliers, installing utility networks and equipment. The total cost of a food truck with a range of equipment services is 2,045,646 rubles. Preparation period – 45 calendar days. During the same period, personnel selection and training is carried out.
Warehousing and storage of ingredients is carried out in the refrigerated cabinet of the food truck in accordance with the requirements of Rospotrebnadzor. The volume of the cabinet allows you to store a supply of food for two to three days. Ingredients are purchased from three suppliers located in St. Petersburg, for pick-up.
Flow sheets are also provided by the food truck supplier. Products are prepared in strict accordance with them.
Once every three days, liquid production waste is drained and the storage tank is lightly cleaned. Cleaning is carried out by project workers.
The production plan is given in Appendix. 1 to this business plan.
6. ORGANIZATIONAL PLAN
The project implementation process can be divided into two main phases: the preparation phase and the working phase. During preparation, the purchase and equipment of a food truck, selection and training of personnel, registration of business and obtaining permits are carried out. The preparatory stage lasts 45 calendar days.
During the working phase, operational activities are directly carried out - trade in places agreed upon with the City Administration, as well as promotion on social networks.
All administrative and management functions are performed by the project initiator. To do this, he has the necessary skills and knowledge in the field of entrepreneurship, and has experience in the catering industry. In addition, the project initiator works on a food truck and serves as a marketer (involved in promotion). Accounting has been outsourced.

The following requirements are imposed on employees: at least 1 year of experience in the catering industry, availability of a medical book. Work schedule: 2/2 shifts. Staffing table and wage fund are given in Table. 6.

7. FINANCIAL PLAN
The financial plan is drawn up for a five-year perspective and takes into account all income and costs of the project (Appendix 2). The seasonality factor is also taken into account.
Investment costs amount to 2,100,646 rubles, of which the main part is for the purchase of a food truck (Table 2). The entrepreneur’s own funds are 1.2 million rubles. The lack of funds is planned to be covered with a bank loan for a period of 3 years at an annual rate of 18%. Loan repayment is carried out in annuity payments, credit holidays are 3 months.
Modest investments, quick start, wide choice of franchisors - this is what makes fast food on wheels attractive. But the biggest attraction of the business is that the mobile point can easily and quickly move to any location. And, as you know, the profitability of any business depends on the location.
Deciding on the type of diner
First of all, you need to decide whether your mobile kiosk will specialize in one product or offer a wide selection of different quick foods. Its location depends on this. In residential areas, it is better to offer food that can replace a quick dinner when people do not have time to prepare it themselves: grilled chicken, dumplings - everything that cannot be eaten on the go. But spring rolls, shawarma and pies are perfect where people need something quick to eat without changing their route or spending too much time on food.
Appropriate place
As mentioned, a lot depends on the location. Sometimes even 50 meters play a decisive role in the success of a business. This issue will be especially acute for a 24-hour diner. There should be a constant flow of people passing through it, even in the dark. Therefore, it is recommended to place such a snack bar near the road.
Please note that in order for your business to operate without problems, you must agree with the local authorities on the location of your fast food. A van or minibus is not a reason to park where you like and conduct business from there. Such actions are regarded as an administrative offense.
Therefore, it is important not only to choose a good place, but also to decide on its owner and contact him for the appropriate permission. If the territory belongs to the city authorities, you must contact the municipal property committee. There you can also request a layout plan for mobile retail outlets, indicating places where there is no need to obtain special permits.
Start-up capital
The first thing that attracts entrepreneurs to this business is its low entry threshold. A converted car or trailer will cost about $20,000, and if you buy a used item, this expense can be halved. Also, the main expense items will be:
- registration and other organizational issues;
- creating a corporate identity;
- purchase of a batch of products;
- staff salaries.
If you open a franchise business, you can significantly reduce the risks of a startup, although you will significantly increase the initial investment. But in this case, the entrepreneur receives a number of advantages:
- no expenses for organizing your own style;
- free staff training and recommendations for entering the business;
- there is no need to conquer the market with a new product.
If you don’t make a mistake with the location, the business can achieve a good return on investment. Moreover, it is best to start with several vans at once in different places in the city. True, in this case you will have to completely obey the rules of the franchisor.
Necessary formalities
The business must be registered with the tax authorities as an LLC or individual entrepreneur. The activities of eateries are regulated by OKVED 55.30: “activities of restaurants and cafes.” For tax purposes, the UTII regime is used, since the amount of tax depends on the area occupied by the retail outlet. And it is, of course, small. Also in this case, the coefficient k2 is applied, which softens the tax regime. Remember that a campervan is vehicle, which means it must be registered with the traffic police.
But these are not all the formalities that a business will face. Since the retail outlet is a snack bar, its activities must be coordinated with the fire inspectorate and Rospotrebnadzor. In the latter, you must provide the following concluded agreements:
- for inspection of ventilation systems;
- for cleaning clothes;
- for disinfection;
- for garbage and solid waste removal.
Equipment
Today on the market you can find offers of ready-made equipped vans for specific destinations. But if you are just starting your business, there is no point in buying new equipment for 25 thousand dollars. You can buy an equipped used van for 5-7 thousand dollars and test your business.
If you sell piece goods or prepare food from semi-finished products, you need to purchase refrigeration equipment. In this case, you will have to organize a power source. TO residential buildings it is impossible to connect, so entrepreneurs often buy a generator (another thousand dollars). Although it does not always cover the needs.
As for equipment manufacturers, it is better to give preference to French companies if you buy electrics, German and Italian if you buy gas, and Danish ones when choosing refrigeration units.
Service staff
To work at one retail outlet, you need to hire two employees who will work on a schedule of two days every other day. Each of them must have a health certificate. Optimal mode wages– rate plus a percentage of daily revenue. Moreover, it is advisable to set a minimum daily revenue on which interest will be paid. This motivates staff to do quality work. It is advisable that they have experience working in catering establishments.
It is important that these are conscientious employees, especially if your fast food sells food by weight and not by piece. Underweight means additional revenue in the seller’s pocket, but also a minus for the reputation of your point. And monitoring the work of staff is not so easy.
Supplier search
Usually, after opening a point, suppliers themselves begin to contact the owners. But for your business to be successful, it is important to choose a good supplier in advance. The quality of the food you offer, and, therefore, the demand for your services, depends on high-quality and fresh products.
For grilled chicken, you need to collaborate with local poultry farms. To sell pies, it is worth establishing relationships with bakeries. You can find manufacturers of semi-finished products and purchase products from them, which you can cook right on the spot.
Income calculation
The main mistake of beginning entrepreneurs is being too tall or too low prices at the start of a business. In fact, you need to find the average price on the market and at the initial stage set your prices a little lower.
A well-promoted outlet during the season (spring-summer) can earn up to $800 per knock. In winter, because of the cold, people prefer to eat in stationary catering establishments. The most interesting thing is that competition plays a minor role in this business. Even two mobile outlets located nearby or a mobile fast food located at a stationary eatery can be a good success.
You can determine the profitability of a point using a simple test - if after rush hour you don’t have a single customer, it’s better to close it or take it to another location.
Cafes on wheels are no longer uncommon in large, densely populated cities. Most entrepreneurs involved in the catering industry have already, in one way or another, considered the possibility of implementing this business idea. In this publication, we decided to consider this project in detail.

Therefore, a 20-year-old girl, Shadi Farsi, decided to bring her own “zest” to this business by organizing fast food on wheels, where visitors are served by girls in bikinis (we talked about something similar in the material “Topless Cleaning.” It must be said that from there is no end to visitors, and after a year of work, Shadi is already thinking about opening a whole network of such kitchens on wheels.
Where to begin
First of all, you need to decide target audience your future visitors (read how to do this). It is this knowledge that will determine the assortment of your establishment on wheels, the routes you will take around the city, the advertising campaign strategy, and much more. In general, the most the best option- this means having a competent business plan at hand, which will allow you not only to see the entire “picture” of your future business, but will also allow you to foresee most of the difficulties that await a novice entrepreneur.
What you need to open a business
The most important thing, of course, is the means of transportation. It’s not for nothing that your establishment will be called a mobile “cafe on wheels.” These can be converted buses, vans, or trailers like caravans. In Moscow, we visited one such cafe on wheels, for which they adapted a double decker - a double-decker English bus. It should be noted that it turned out simply gorgeous! A stall on wheels differs from, for example, a mobile coffee shop in that in the former, visitors have the opportunity to sit and quietly eat, drink coffee, watch TV, listen to music, etc.
There is also the option of a mini-cafe on wheels, in which several folding tables and chairs are placed in the place where the mobile kitchen on wheels stops, and, if necessary, awnings are laid out near the car. In this case, the vehicle itself is completely dedicated to the kitchen.
Your mobile premises must meet the following requirements:
- sanitary and epidemiological service - have certificates of conformity for the equipment used, a number of contracts for the provision of imported water, waste disposal, solid waste disposal and cleaning of the surrounding area;
- fire safety standards - this is the serviceability of electrical equipment, the availability of fire extinguishing means;
- technical rules. To do this, you need to provide a copy of the trailer (van) registration certificate, its photograph, and a certificate of conformity. In addition to this package of documents, you must also have an agreement with the company that supplies the products, and a conclusion from Rospotrebnadzor on the transport on which the products are delivered.
- And one more thing: according to the rules, bringing in food and taking out waste must be done through different doors. The number of required documents is impressive, but opening an ordinary cafe requires even more. And then - you can always come to an agreement with everyone.
By the way, a little advice: make sure that the appearance of your drive-thru cafe on wheels is exclusively in bright, rainbow colors, and is equipped with an attractive sign - the influx of customers will increase exponentially. In addition, vehicles must be completely soundproofed so that as little sound as possible penetrates outside. I think it is unnecessary to say that the room on wheels should be warm and have air conditioning; none of the visitors will sit in the cold and stuffiness.
Menu selection in a cafe on wheels
A cafe, especially a mobile one, is still not a restaurant. Therefore, the main focus of the menu should be on dishes that do not require long cooking times. These can be light snacks, salads, baked goods, fast food, sandwiches, confectionery. Drinks include hot drinks (tea, coffee, chocolate), juices, soda. Trade any alcoholic products in mobile retail outlets less than the area established by law is prohibited.
Although the organization of the kitchen is often provided for in such projects directly in vehicles, many owners of such establishments are trying to get rid of the unnecessary hassle associated with preparing food right on the spot. That’s why they keep ready-made meals in refrigerators, which can be heated in the microwave if necessary. In general, whether or not to have a kitchen in your café on wheels is up to you to decide; no definite advice can be given here.
Necessary equipment
In principle, you will need most of the equipment from the “arsenal” of a regular stationary cafe, these are:
- a couple of refrigerators;
- microwave;
- oven for cooking;
- coffee machine;
- water heater;
- the required amount of disposable tableware (using others would be impractical), napkins, and hygiene items.
Place a container inside for used disposable tableware. If the furniture is located inside, then it should be attached to the floor so that during movement nothing “moves away” along with the table.
From “non-standard” equipment you will need:
- TV;
- voltage converter to 220 volts;
- audio system with speakers located throughout the vehicle interior.
Driving routes
A few words need to be said about what routes you need to choose to move around the city streets. If the establishment is rented for several hours by one company, then the route, of course, is chosen by the one who pays. In other situations, you should choose streets with smooth road surfaces so that, if possible, visitors do not experience all the inconveniences inherent in Russian roads.
As an option, you can take a walk around the sights of your city (for tourists), focusing on the audience present, take a ride to romantic places (for couples), or take married couples with children to amusement parks. Of course, you need to have several driving options in your navigator in advance (which will help you avoid traffic jams).
Staff
There should be no problems with recruiting employees. Find people with experience working in enterprises fast food it won't be difficult. The main thing is that they have medical books available. It will be enough to have two cooks-waiters and a driver-loader in one shift.
Another point is obtaining permission from municipal authorities to conduct trade . Usually, administrations of localities go towards such initiatives - after all, taxes from income go to the local budget.
As you can see, there is nothing complicated in implementing this business idea. Constant expansion of the assortment, organizing food delivery to order (read how to organize delivery here -) will only have a positive effect on your business, and will promote advertising in every possible way. With a little effort and creativity, your stall on wheels will become the most famous fast food outlet in the area and in the city.
By the way, the opinions of business experts regarding this business idea are contradictory. This is what opponents of the mobile cafe refer to (taken from the materials of the magazine “Your Business”):
- Most likely, the cost of maintaining and operating this bus will be comparable (or even more) with the costs of maintaining a stationary cafe of comparable area: gasoline costs, staff salaries, technical maintenance. At the same time, income will obviously be less - in-house production is always more profitable, but in this case you will have to purchase finished products on the side.
- Secondly, this idea The city's sanitary services will not approve. If we take on this project, then it might make sense to reorient it towards corporate services (birthdays, parties, graduations) and focus on entertainment program and drinks.
- The project is not viable. Firstly, Rospotrebnadzor will never release such a bus on the route (any catering establishment must be connected to a stationary water supply and sewerage system). Secondly, according to fire safety rules, there must be at least two entrances. There is only one input in the project.
